There's nothing better than a one pot meal! This one requires little chopping and literally just tossing ingredients in a pan and walking away.
Spanish Rice & Chicken
6 oz package Spanish style rice
1 tablespoon butter
2 cups water
2 chicken breasts, diced into cubes
1 cup salsa
14.5 oz can diced tomatoes with green pepper
In skillet, heat butter and brown rice. Add water, chicken, salsa and tomatoes. Bring to boil. Cover and reduce to a simmer for 30 minutes.
Serve with a side salad and Enjoy!
