By the time 5:00pm rolls around in our house these days, I want to escape somewhere with a huge glass of wine. Both my kids are fussy and hungry and it seems I can't get dinner on the table fast enough. The recipe I want to share is easy to make (I usually prepare it during naptime), makes a lot (we always have leftovers) and is YUMMY! Enjoy!!
Mexican Lasagna
1 pound ground meat (you can also use ground turkey)
taco seasoning mix
jar of mild or medium salsa
package of shredded mexican cheese
4 large tortillas
optional: diced jalapenos, black olives, diced tomatoes
Preheat oven to 350 degrees.
In large skillet, brown meat. Following package directions, add taco seasoning mix. Drain fat and set aside.
Grease a 9x13 casserole baking dish with cooking spray. Layer with two tortillas, ground meat, salsa, and cheese. Repeat.
Bake uncovered for 20-25 minutes. Let stand for 5 minutes.
Serve with yellow rice and a salad. YUMMY!
