Family, Food & Fireworks

Happy 4th of July from Tennessee!!! We had such a great day celebrating with family and friends and ended the day with a BBQ and, of course, fireworks.



Instead of a flag cake this year, we made Firecracker Cakes. The kids loved them and they were so easy!! We used the heavy duty, clear plastic cups instead of mason jars. It made for an easy clean up!

Firecracker Cakes
1 box white cake mix
red food coloring
blue food coloring
18 clear plastic cups
2 cans white vanilla frosting
red sprinkles

Preheat oven and spray 36 muffin cups with cooking spray. Follow package directions on cake mix box. Divide batter into 2 bowl. Tint 1 bowl with red food coloring and the other with the blue.

Fill 18 muffin cups 2/3 full with the red batter. The other 18 with the blue batter. Bake about 12-15 minutes. Remove from oven and cool completely.

To assemble, drop one cupcake into the clear cup. Add icing using an icing bag (or you can use a plastic freezer bag and cut a hole at the tip). Add the second cupcake and frost. Decorate the tops as you wish. We added red sugar sprinkles and a toothpick flag :)
