Fall Dish - Apple Crisp

As much as I hate to see the summer go, fall really is a great time of year. Apple and pumpkin picking with the kiddies, Halloween, fall mums and that cool, crisp air!

Here is one of my favorite fall desserts. I usually make this after a day of apple picking. The best part? It's much easier than apple pie!

Harvest Apple Crisp

Filling
5 Granny Smith apples, peeled, cored and cut into 1" pieces
1/2 cup granulated sugar
2 teaspoons fresh lemon juice
1 teaspoon vanilla extract
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon kosher salt

Streusel Topping
1 stick unsalted butter
1 cup firmly packed light brown sugar
1/4 teaspoon kosher salt
1 cup all-purpose flour
1/3 cup quick-cooking oats

Position oven rack in center of oven and preheat to 350 degrees F.

To make filling: Combine the apples, sugar, lemon juice, vanilla extract, cinnamon, nutmeg and salt in an 8" square glass backing dish. Mix well and set aside.
 To make streusel topping: Melt the butter in a saucepan over medium heat. Remove from heat and stir in brown sugar and salt. Add the flour and oatmeal and stir until just incorporated. Do not overwork. Crumble the mixture evenly over the apple filling.
Put the baking dish on a baking sheet and bake until the topping is golden brown and filling is bubbling, about 50-60 minutes.
