Fall is in the air here in NJ! We have had a beautiful week of sunny skies :) Great pumpkin picking weather which we plan to do this weekend.
Here's an easy and yummy pumpkin bread recipe from a dear friend of my late mother-in-law. The year my mother-in-law was sick, she would drop this by every week no matter what time of the year! I couldn't resist making a few loaves this week. Enjoy!
Pumpkin Bread
2 eggs, beaten
1 1/2 cup sugar
1 cup canned pumpkin
1/3 cup water
1/2 cup vegetable oil
1/2 teaspoon salt
1 3/4 cup flour
1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ground cloves
Preheat oven to 350 degrees. Mix all ingredients together and bake in greased and floured loaf pan. Bake for 45 minutes or until knife comes out clean. Makes 2 loaves or 4 mini loaves. *Also freezes well!*
